Meal Plan Noodling

     I'm back to at least noodling around in my head potential meal ideas. The girls thought it might be nice to get some sandwiches or put together a meal to go to the river or out to one of the  out of town parks for Father's Day. I got that pie made-just needs the whipped topping, so may bring aalong or eat at home, though of course DD1 won't eat becasue it has dairy. I'm ready to think about other meals. Don't get any excitement as things will be pretty ordinary. The college kid is just not feeling anything but curry it seems-maybe a stir fry or fried rice too. Even DH has been a bit unenthused with meals. Well, I never promised them a five star experience and they are welcome to help themselves to the pantry and appliances. Here's my options:

  • Cheese ravioli with mushroom sauce
  • Baked chicken thighs, mashed potatoes, and steamed carrots
  • Brats, Asian salad, potato wedges (probably tonight for dinner)
  • Meatballs and gravy and rice with green beans
  • Chicken friend rice and vegetables and maybe try out the peanut noodles Anne wrote abut last week
  • Tika Masala (bought a sauce) with vegetables, and chicken
  • Spaghetti and meatballs and marinara
  • Tuna hotdish with cheese, sweet corn or mixed vegetables

     This will keep me from needing to grocery shop other than probably stuff for DH's lunch's, fruit, milk, and bread. There should be enough leftovers for DD2's lunches before she heads to the school each afternoon. Next week I'll need to think about our 4th of July plans and how much time we will or will not be a the lake cabin, and what to bring for meals. Memorial Day weekend every family sort of just did their own meals, but I'm not sure if that will still be the plan, or even if we will be there the same days and times. I have dried beans and several of you have shared recipes for a baked beans, which with old fashion hotdogs, potato salad, cole slaw, and water melon, sound like a perfect menu! 

     I know pretty much every city cancelled Fireworks, so I'm guessing the extended 4th weekend will be jam packed with the full family. Depending on what the kid is scheduled at her second job, she probably will only have a day to a day and 1/2 to be there. DD1 already said she plans to be there on the 2nd, a flex day after working all next weekend, and July 3rd, her holiday, but then heading further east to spend Friday night to Monday morning with friends. That's a full week plus off, so plenty of time to decide. What's on your menu for the week? Feel free to add to my baked bean recipe collection in the comments.

  1. What's on the menu this week is a simple on the grill chicken recipe I used to make when the grill was working. I hope to get it out and try the Weber. It's a lot of work but the chicken is good.

  2. We need to go to the grocery store this week, so I'm working up meals I can make until then in my head too. I have salmon, but we are getting tired of it now, so I need to back off from that for a bit.We will figure it out though.

    1. I wish I like fish more-we have it so seldom, but both DH and my 19 yea rold will order it occasionally for take out. Boredome has crept into my house. I'd like ot just do top offs until July.I've reined in my spending a bit in June.

  3. As usual, chicken is on the menu...lol. Now I am wondering if the fireworks here on Red Mountain have been cancelled.

    1. There will still be plenty of hoe grown fireworks. I think it is as much about cost this year as it is about helath safety. T emoney is just going to be tucked away by cities as they lose revenue elsewhere.

Last night I spent far too long with a neighbor playing with our new kittens, so dinner changed from the requested meatloaf and mashed potatoes to tuna salad sandwiches made with celery from a kid's "Buffalo Wild Wings" leftovers. (A group of friends got together to celebrate being able to get out.) Today, youngest is grilling steaks for DH, with me baking a Boston Cream pie for dessert. Reading your menu plan, and I have to giggle. Earlier in the week I was craving it, so I tried a slow cooker chicken tika masala. It was underwhelming, though. Perhaps my garam masala wasn't fresh enough? I may doctor up the leftovers with more ginger and some cayenne. Will you link your recipe?
    Tuna casserole is definitely in the works for us later in the week, as is the previously planned meatloaf with mashed potatoes. Our garden is full of lettuce, so we have been eating a lot of salads as well. I'd like to say I make my own dressing, but I don't. I found bottled Italian dressing at a store for $0.50/each, so stocked up. I also regularly splurge on Litehouse brand bleu cheese dressing, which is our favorite! I am slowly regaining my desire to cook. Not sure what happened, but my family simply didn't know what to make of it!

    1. I need to remember to tag my posts. I'll have to look for the sort of recipe, though it relaly is a mash up of a chicken tika masala and a a veggie curry. I bought a sauce at Aldi so no reciepe-just whack it in the slow cooker with vegetables and check peas, and cross fingers. Nice move using the BWW celeray for the sandwiches.
