To Heck With Meal Planning-Apparently

I haven't even made a list of possible meals. I'm a the point where I have a full cupboard,  some things in the freezer and refrigerator, but am uninspired for all. We had burritos/burrito bowls last night. The leftover will be good a for a few lunches. We're about to head to the cabin and I haven't thought of what to bring. We could bring a pork loin, but it;s frozen. It's small, so could thaw really quick. I have some baking potatoes I can toss in a sack as well along with some grapes. I planned nothing yesterday. Maybe we will stop on route and get something. I really am not sure, but nee to get going no. I'll likely finish the post tonight after lightning strikes meals inspiration.

To continue this post, we ended up bringing two remaining turkey cheddar brats, breaded chicken strips, grapes, and baked beans, which we did not eat. We let about 4:30, and DH is  mowing the grass. I'm just going to make a box of shells and cheese when he is done for supper. Living the life. but he suggested it. It's giving me a little time to think, and here'a re a few meals I think we might have-keeping me from a grocery shop for a few days.

  • Turkey meatloaf, mashed potatoes and frozen vegetables
  • Apple cheddar sausage balls and homemade air fryer fries, green beans
  • Spinach ricotta ravioli with garlic and Italian herb drop biscuits
  • Spaghetti and meat sauce
  • Hamburger and gravy over rice. frozen vegetables
  • Pork loin with red beans and rice, corn
  • Pork Stir fried rice, with vegetables and egg rolls
  • Egg salad sandwiches and soup (I have both a vegetable beef, and the TJ tomato)

There, that gets us a full week if I truly do not want to go. We will be at the cabin for sure next Sunday, but possibly DD1 and I might go up on Friday night or Saturday, depending on her week. She's been off since a week ago Friday so no doubt will have a long week of playing catch-up. The weather is cooler, but not yet fall yet. I'd like a good pasta salad or two before summer ends-maybe potato salad too, but I do not make it well. My daughter does with her vegan mayonnaise, so maybe I can coax her into making some. What's in your meal plan this week? Have you given up planning like I seem to have?

  1. I have vegetables, and I will thaw meats. That is my plan, short and sweet.

Italian herb biscuits sound delicious. Drop biscuits are the only kind I make anymore.

  3. I need to make a plan which I won't follow, and even though I don't need it I am going to ThePig tomorrow for ground chuck. It is at its newly price, which is 50 cents a pound higher than its pre-covid low price

    1. I think we all just have to accept groceries will be higher. I think I have seen the last of $400 budget challenge in my H&G category. Hubs suggested fish and chips, but we do not hav fish. Hell need to wait until I go to the stor again.

  4. I planned last week and the only thing on my plan that happened was take out.
It is an effort in futility that I continue doing.

    1. I wasn't feeling the plan last week at all. I even had DH pick up frozen pizza one night I was so useless at planning.

  5. I made a big pot of slow cooker zucchini soup yesterday- it had Italian sausage, green peppers, celery, onion, diced tomatoes and zucchini. It's on the menu all week- I know I'll get tired of it but I also have cole slaw and cucumber salad. Can you tell I have lots of produce? I also baked cookies for DD to bring to GS- he forgot something he needed for band so she drove there yesterday- it's about 2 hours away. He said the food is great- he has the most expensive meal plan because he eats a lot although is quite skinny. I'd like to get my freezers empty so I can start some holiday baking and freeze- I can just drop off on folks' porches in December. At least it gives me something to look forward to.

    1. Mu daughter is on the fence about her meal plan. On M, W, F, she has class from 10:30 until after 1, so if she doesn't eat breakfast before, she is so hungry, but then I know she will get crazy busy and only do 1 meal in the dining hall some days. A dilemma.

  6. My meal plans have been becoming increasingly more vague. Would-be-College-Boy took a full time assembly job to pass the time until he can get back on campus....I am not wild about the idea. Same plan as when he was in school in but if campus opens and he doesn't re-enroll, that changes drastically. In any case, he isn't around much, and the last thing he wants to do when he gets off work is eat/socialize with us. Also, I was sick last week, and still not feeling fully well. That said, DH grilled some terrific steaks on Saturday. Last night we had pork chops ($1.69/lb) with homemade canned applesauce and a pumpkin cheesecake made with cream cheese which was lurking about. I also managed to pick abe a half flat worth of blackberries, but didn't have the wherewithal to make jam, so straight to the freezer they went! Today is a bit busy, so my guess is risotto for dinner. Labor Day may see us with a roast turkey breast depending on what the weather does. See?I am all over the place!
