Weekly Menu Plan-Challenge and New Recipe

 


     I had a really good weekend and sad to see it end. I never seem to be as productive as I intend, but some things that needed  to got done so there's that. I picked up a few odds and ends, but didn't really grocery shop, but I think I can make an Ok menu. First, here's the change outs from last week. Black is planned, and red is what happened. 

  • Sunday- Pasta salad, meatballs in BBQ sauce, tortilla chips and corn and black bean salsa. each meal has a vegetable or two. We'll both have at least two servings of fruit in the day. 
  • Monday: Marinated grilled chicken, roasted red potatoes(need using up), stuffed red pepper with cous cous (partial box in pantry irritating me) and cheese, garlic bread 
  • Tuesday: Taco Tuesday, with refried beans and Spanish rice
  • Wednesday: Vegetarian chili, using the remaining black bean and corn salsa, crackers or a grilled cheese on the side Sloppy Joes and tator tots
  • Thursday: Chicken and pasta bake, with tomato and cucumber salad, Vegetarian chili, using the remaining black bean and corn salsa, crackers or a grilled cheese on the side
  • Friday: Sloppy Joes, sweet potato wedges We wen tout to eat with a gift card
  • Saturday: Homemade pepperoni pizza Chicken and pasta bake
     I mostly switched days on things, but also skipped making a couple items that I might move to this week. One stop yesterday was the Dollar Tree and I managed to but  five items that I will try to incorporate into a full meal. I'm a bit iffy on the meat item I selected, so might change that out. I have a smallish store near me, and the refrigerator and freezer section was very limited. After watching a few videos, I selected items others bought before, so fingers crossed it will be a  nice meal. I'll share in My Wednesday Pantry post the rules, the details, and the results. 

Sunday- Per DH's request, even though we just had a pasta bake the night before, was homemade macaroni and cheese. It was pretty tasty. I had sliced cucumbers and tomatoes on the side.  
Monday: Chicken and dumplings, mashed potatoes
Tuesday: Dollar Tree $5.00 Meal Challenge 
Wednesday: Meat loaf, sweet potato wedges
Thursday: Crock pot mock lasagna
Friday: Homemade Pepperoni Pizza
Saturday: Burrito Bake from Taste of Home

     Of course, we may have a night where DH decides to eat out, or I might just dial it in and open a carton of soup. If vegetables aren't called out, know I'll serve something with the main dish. Also, if I end up not wanting the oven on, that could force some changes, but this is a oven heavy week if all goes to plan. I've not tried the burrito recipe before, but I've not had a bad recipe yet from Taste of Home. My mom had given me and one of my sisters a subscription for years but now pretty much you can find them online. I often google the idea I am thinking of, and recipe options come up and I gravitate towards those that are  Taste of Home. How about you all? Is anyone trying anything new this week?

    M can have a small amount of beans, so this allowed us all to eat the same thing. Except Nick, because Nick doesn't like things mixed together. (That's the standard - it's a rare meal we all eat). He makes himself something when he doesn't want to eat what's on the menu. But, 3/4 is good, so I'll take it!

  2. I made homemade chili sauce for eating over hotdogs with cheese on top. I love chili cheese hotdogs from Sonic. I will post that today.

  3. The heat and humidity are back this week so no oven meals for us. We’re also getting haze from the wildfires this morning. I work late today so everyone is on their own but there’s plenty to choose from. I actually don’t have a game plan at all for the week. I kinda want to make chicken soup, even though it’s warm out. I’m also craving a Sam’s club rotisserie chicken so those go hand in hand. I have a corned beef brisket taking up space in the freezer that hubby picked up for 99 cents a pound but no potatoes or cabbage. Maybe sushi one night this week, only me and the kids will eat that though. I have a bag of meatballs too. I could do spaghetti or subs or the grape jelly and chili sauce recipe. There’s leftover taco meat in the freezer so I could do taco pasta or walking tacos. None of this sounds very inspiring but no one will starve. No new recipes for me this week. I’m too tired to be creative. JoAnn

    1. I think I am going to add a rotisserie chicken at some point this month as well. DH loves it, and I love the soup broth I get from them. Easily, we'd get 7 meals plus leftovers from one-eat as is, deboned for hot dish (2 meals), deboned for chicken enchiladas or tacos (2 meals) , and then pot of soup (2 meals).If I could ever find a decently priced whole chicken make one more often, but when the rotisserie are under $7, and no work, hard to pass up.

  4. I am not sure if you can consider this "new" or just using what I have here. I had a box of brownie mix that I needed to get rid of (wanted something chocolate but not brownies) I had also found a bag of white chocolate chips in the freezer. I made cookies with the brownie mix and stirred in the white chocolate chips. It was a dangerous thing to try because it is way too quick and easy to have really tasty cookies.

  5. "Dial it in." Hehehe. I sort of did that all last week, with meals consisting of things like leftover pasta with some more sauce and cheese added, then popped in the oven, a chicken pot pie from Sunday's roast chicken dinner, and last night being grilled steaks, with me only opening a bag of quick sale salad. I DID make some great country fried steaks on Saturday, but served them with an envelope of instant mashed potatoes--now how did those get in my pantry? No matter, they are out now.
    I am endeavoring to do better this week. I promised youngest I'd make risotto tonight, along with a pan of brownies. He made a tough decision to stay in the public h.s. rather than participating in dual enrollment at the c.c.--claimed that with an incomplete freshman year in person, and entire sophomore year remote (which was pathetic) he didn't feel confident in his ability to tackle college level work. I had to respect his choice, particularly the wisdom he used in arriving at it. That said, he is out the door around 6:30 a.m., and not back home until close to 4 p.m., so the days are long. As such, I've been favoring his choices for evening meals.

    1. I like treating my kids (when they are around) with things that bring them comfort when stressed. Love them through their stomachs! It does sound like he made a wise thought out process to come to his choice. So do you have the three kids-College Boy, college girl, and the now junior in highschool? I thought you had 6 kids-or are there older ones than the college boy? Maybe I just read things wrong over the years.

  6. SO happy you had a good time this weekend and to hell with always having to be conscious of what and how we are doing. We all need time to just be. I really, really hate sloppy joes. Nightmare meal from my child hood, even having you write about it makes me cringe. Isn't that funny? Well to me anyway.
