House of Two Meal Plan

     


     There's just the two of us this week until Saturday. We have a grad party so don't even need to plan for us all then. I'm cleaning out cupboards and freezer and we're eating down food on hand. Yes, prices are up but they're up if I buy now or later, so I'm not bothered to be eating things up especially from freezer. I'm thinking new system for summer in anticipation of lake weekends and change of people's schedules and want a relatively clean start. Last week's meals were random and disorganized, but we were fed. 

  • Sunday: Boxed Mac and cheese, broccoli ( DH had gone with mom and family for late lunch, this was just my daughter and my meal)
  • Monday: Roasted veg, chicken, and couscous
  • Tuesday:Chow mein and egg rolls  
  • Wednesday: Taco night 
  • Thursday: BLTs and tots 
  • Friday: leftovers 
  • Saturday: Chicken-bacon wraps

     Here's what I'm thinking this week- no assigned days, just options based on what's in house now to use up and I'll play it by ear night to night. This is a starting place.

  • Tuna hotdish
  • Sloppy Joe's and tots
  • Egg bake with ham 
  • Fried rice and the last two egg rolls 
  • Panini sandwiches 
  • Taco salad
  • Loaded quesadillas 
  • Ham, cheese, and pea pasta salad
  • Frozen pizza
  • Hamburgers
  • Last of some frozen ravioli
     I need ingredients for a pan of bars for my nephew's grad party and easy something's for other weekend meals so will just pick up odds and ends from local store. I sent home some items with my daughter that came home from college. She brought some sweet potatoes she thought might need using up. I'm still not feeling cooking or meal planning and prep. If it was only me, I'd not bother thinking at all. So inspire me. What's on your meal plan for the week?

  1. Well it’s just me and I still cook from scratch most of the time. I eat a lot of leftovers though. My sis often will just pop some popcorn or get a cheap fast food burger- she doesn’t care much for cooking. I’m going to make some Iowa Maid Rite for lunch - recipe says for 4 SANDWICHES so that will be 2 days for me since I’ll likely have it for lunch. GS has consented to a small grad party here. It’s not the norm so this should be fun- just family and 8-10 of his friends. He was number 10 in his class of over 500! He’s going to major in physics- only class I ever dropped lol. I hope your daughter is having fun- my son lived in Costa Rica when he graduated from college. His GF was enrolled there in some grad program. They didn’t like it and moved back to California and broke up years ago. I never got to visit though! Nan

    1. The reality of my life is that I'm just not going to always cook from scratch. I have cut back on convenience items, but all from scratch "ain't gonna cut it. " Congratulations to your grandson. Enjoy his get together.

  2. I understand! When I was raising my family I did not work outside the home and had lots of time when the kids were in school. Now I’m busier so lots of leftovers! I do best when I prep early. I’m up at 4 AM so get a lot done before 9 when I can start making phone calls or visit my clients. This AM I cut up a lot of vegetables and grated my cheeses and will be making eggplant Parmesan tomorrow. My marinara is simmering on the stove. Nan

  3. Tonight we're having lamb kabobs. That's all I've planned so far. I went shopping yesterday and have an abundance of fresh veggies and fruit so they will play heavily in this weeks menu. Enjoy your Sunday!!

  4. The only leftovers are green beans and fruit. Two cheese and bacon burgers are thawed and ready for tonight. This is the time I get out about four frozen meats and cook them in one cooking session for the week. At least three packages of chicken are on my mind. I have a pretty tomato and salad stuff to go with the burger. I cook for a family all the time and it feeds us well.

    I love cooking from scratch and some days feel sad when I don't. HOWEVER, there is nothing wrong with a shortcut some days. I do have my standbys that help me along when I am too tired.

    1. My husband loves the hamburgers with the bacon and cheddar ready to go. He'd be envious. Our local grocery has a real butcher counter so he splurges on them at least once a month. You had me at tomato- love them on a good burger.

BLT's, cheese tortellini and marinara sauce (pasta found in the back of the basement freezer) with naan that I will add a bit of olive oil to and eat with hummus (might put a bit of Parmesan w/garlic powder, for lack of garlic bread) and pop in the oven, beef and broccoli stir fry w/rice, meatloaf made with a tube of turkey sausage (found in same freezer) and ground turkey, mashed potatoes and a veg or salad and there will be some leftovers from the last 3 meals to round out the week, I'm sure.     1. Hummus and pita bread would be enough of a meal for me too. DH just likes meal meals and I'd rather pick when just us.

  6. This is a lazy week for us. I got back from London on Friday, and am trying to rejoin reality here. We bought at Costco sized pack of ground beef, so had burgers yesterday, and I'll make tacos tonight. We had frozen lasagna one night. We'll do leftovers of the burgers/tacos & then I'll probably heat up enchiladas my mom left in the freezer.

    When I'm low energy, I find it hard to plan much of anything, so getting everyone fed will be the big win!

  7. We've been away for a week so will need to do groceries. Husband has asked for dumplings and your taco salad gave me another idea.

  8. Last night we had beef back ribs and homemade coleslaw. The ribs were on sale at our local grocery store for $1.99/lb. DH loves ribs, so I decided to try my hand--I dry rubbed them with a homemade rub, brushed them with homemade barbecue sauce, put them in a foil pouch, and cooked them at 275 degrees Fahrenheit for about 3 1/4 hours. They were so good, that DH dispatched eldest to the store after dinner to see if he could pick up more for me to pop in the freezer for a later date. They were out, however. (According to my friend who knows the manager, I wasn't the only one who had the idea to get more after dinner.)
    I am at a loss for the rest of the week. I found a pound of Kraft, Colby-Jack cheese for $0.98--best by date is today, but I couldn't say no! I will probably make a tuna casserole, and beef burritos at some point this week to use it up. Tonight I think I am going to make some baked stuffed chicken breasts, because I found packages of Pepperidge Farm stuffing mix for $0.50/each, and picked up two. I'm supposed to be clearing out the pantry and freezer, but I figured the cheese and stuffing will help me use up the freezer items.
    I will do fish and oven fries, or baked salmon and roasted potatoes at some point, perhaps, but beyond that, I have no idea, and even less desire to plan. I'm not sure what's going on, but I just don't feel like cooking.

  9. I am eating leftover hamburgers for the week with fresh spinach I will sauté in a little olive oil, little tomatoes, and onion. Other than sandwiches and fresh mulberries from my tree that is it. Cindy in the South

  11. I'm cooking up a big pot of potato leek soup with andouille sausage in it. Yum! It'll make 4 meals for the two of us.
