My Wednesday Pantry-Going Banana's

     


     We were in a glut of too many bananas again. I'm also trying to eat down "stuff" so whipped up this banana bread. I'll share what I did, but it's not so much a recipe but a kitchen experiment.

Mushed 4 overly riped bananas then added 3/4 cups sugar, splash of vanilla, and a few shakes of cinnamon. I have all these oatmeal packets, so added three, two brown sugar and one cinnamon spice, plus one cup flour, 1 tsp each salt and baking powder, and 1/2 tsp baking soda. I made sure the leavening v as incorporated into the flour before  stirring it all  Oh, separately I made two flax eggs, (1 TBLS flax seed-3 TBLS water), and poured in after dry stuff. Mixed all together,. Sprayed three little loaf pans and baked @350°for 35 minutes, tested, then another 5.

     The bread was caramelly from the brown sugar, nutty sort of from the oats, and dense and delicious. I froze two as I meant to give one to my daughter and I was making a piggy of myself with the first.

     I can't figure out our banana needs. Sometimes 7 is too few and other times, I'm figuring out ways to not waste them. I nabbed four boxes of vanilla jello pudding at the discount store earlier. Next time, I might try making a banana pudding or cake. Mushy bananas in pudding might not be the best so would have to use earlier than the four from Sunday. A cake would need to go somewhere as it wouldn't get eaten here after a piece or two and I'm not sure a cake would freeze well. Maybe there's a Nothing Bundt copy cat for banana flavor.

  1. I usually buy a half dozen at a time, depending on how the bananas look. I eat them mushy in a glass of milk, sort of a chunky milkshake, just mashed bananas and milk. Chocolate milk with a mashed banana is the best ever. I eat a banana every day. I like fruit salad--green grapes, sliced banana, and chopped apples with the skin left on, and Miracle Whip, of course. And, other fruits can be added.

    I have made a mixture of yogurt, honey, artificial sweetener, and lemon juice to put in fruit salad. This is a little more sophisticated than MW. But, Miracle Whip is easier when I am making this for one. Tommy hates bananas, so thinks all this banana eating is gross.

  2. My daughter typically eats a banana every morning before school. She prefers greener ones so I kinda get a longer shelf life out of them since the rest of us prefer them sweeter. Having said that, I do have a bag of frozen mush just waiting for me to make banana bread or pancakes. I make the laziest version of banana bread possible and use an el cheapo white or yellow cake mix according to directions, a dash of cinnamon and call it a day. No frosting but oatmeal sounds like an interesting inclusion. I probably will only buy them once a month from now on with school winding down. During quarantine, my husband bought an entire case of bananas from a little grocery store at a ridiculously cheap price. That was interesting. We got very creative with them! JoAnn

    1. My daughter buys two bunches at a time at Sam's Club as she uses a ton. We just go in phases. I to have frozen but didn't want to throw yet more in there this time.

    Here are my recipes for banana cake, banana pudding and banana bread. We eat a lot of bananas. When they start getting bad I peel and freeze. They work great for the banana bread or smoothies. Just blend up a frozen banana, berries of your choice and a bit of milk or water. It's SO good.

  4. I’ve never been a fruit eater and definitely not a banana fan. Luckily I always have good blood work and am not low on potassium. I love vegetables though and cheese lol. I finished my maid rites and am making a zucchini casserole that I will eat the next couple of days. I could use some Romaine lettuce too but I’m ‘abstaining’ from grocery shopping until next week. Nan

    1. With my dad, we actually had to limit his banana intake his last couple years due to too much potassium. He and my mom had shared a morning banana nut after she died, he ate a full one. Who'd have thought?

  5. You can substitute bananas for eggs when baking. 1 egg equals 1 mashed banana. This works really well for pancakes.

    1. I think using both four banana and the flax eggs made my bread super rich. I hadn't thought about the banana being an egg substitute as well.

  6. Bananas drive me bananas. LOL. DH likes them just "so" which of course is impossible except for maybe one day and they are all ready at the same time. I've given up.

  7. My ex used to take my banana nut bread into work with cream cheese. They all seemed to love it although frankly I'm not that into it. And of course the bananas always go off before I get them eaten. Thankfully Charlie adores them, although I'm not sure if he just likes squishing them between his fingers!

    1. I do like a bit of cream cheese in it as well. I much prefer pumpkin bread but this tackles my banana glut.

  8. I usually buy 6 bananas a week. I'm the only one that eats them and I always put a piece of foil on the attached ends to slow down ripening, although they still ripen faster when it's warmer (Summer). I try to get organic, partly because they are often a bit smaller and they are in better condition. (Aldi) If they ripen too fast, I do make banana bread. I used to add flax seed and wheat germ to substitute for some of the flour, which made my bread not quite like everyone else. I also used to use half wheat flour. Now with certain health issues, I forgo the flax seed and the wheat flour and I don't always have wheat germ on hand like I used to. I use the Betty Crocker recipe and add cinnamon and extra bananas and cut back a bit on the sugar. Not a fan of banana cake. I do have to say, your combination of ingredients sounds interesting and I'd be willing to give it a go. Ranee

    1. This worked to use up several oatmeal packets plus my daughter will eat since no eggs or dairy. I like oatmeal in many baked goods that don't usually call for it.

  9. I love banana bread and always overdo when I make it. The nice thing about them though is you can throw them into the freezer and make bread when you have enough.

  10. I like bananas but not too ripe. They always get overripe, then I toss them peeled to the squirrels who love them. I've never frozen bananas. Do you freeze peeled or with peel on? I don't have a blender so smoothies are out. Maybe I could make banana bread but I really hate baking so probably won't! I'll just keep feeding the squirrels.

    1. Lucky squirrels! I rarely bother peeling- just check the whole banana in my freezer, but it has become a mess.

  11. TheHub buys 5 bananas each week because he takes on to work with him every morning. Except he forgets to take them and by the end of the week I have 2 oversoft bananas to do something with. I keep a gallon size freezer bag in the big freezer and plunk the very ripe peeled bananas in it. No idea what I will eventually make from them!
