What a change Tuesday to Friday. We went from mid July to mid November weather. It meant a change in food we enjoy too.
Here's what we ended up eating.
- Sunday: Winged it. DH had gone to brunch with his brother before putting dock in. My daughter and I made a bunch of different stuff with her garden produce and some baking while pup was having his crate time.
- Monday: Chicken wings, steak bites, cucumbers, stuffed crescent rolls. It was Monday night football Vikings game
- Tuesday: Goulash
- Wednesday: leftovers, DH grabbed a bite late for lunch, went to daughter's for pup
- Thursday: Grilled cheese with or without tomato, DH had a mug of Trader Joe's tomato and red pepper soup too
- Friday: Chicken tortellini soup
- Saturday: DH had a big lunch at work, we each heated up a cup of the last of the TJ soup and had peanut butter toast with it
I have a busy week. I'm doing puppy duty a couple days but have two days of a conference in downtown Minneapolis so leaving early. I'm going to to some prep today to make life easier. Or, as the comic says, open boxes and add water.
- Sunday: I'm going to make Chili in the morning, hoping for lunch leftovers. We think we're going to go out for an early supper.
- Monday: Make ahead burritos ( puppy care afternoon)
- Tuesday: Early work day from my daughter's, have work event later, frozen meatballs, gravy over mashed potatoes
- Wednesday: leftovers likely, FFY
- Thursday: DH can make fries and chicken sandwiches, still late work event.
- Friday:
- Saturday: Bean soup and ham sliders ( extra to bring a jar to my sister)
I’m only eating broth due to a lovely colonoscopy scheduled for tomorrow ugh. I start the prep with the icky drink at 4pm. I haven’t had one for over 10 years so this should be it at my age. Tomorrow PM I’m eating something decadent lol. I trained my Berner but she was pretty easy- a wonderful dog but short life span. I had one other I inherited from my son- he was a great dog too but did some damage in my house. No more pets here. Help I want food. Guess I’ll go take a walk. Nan
ReplyDeleteGood luck, Nan. My one and only so far colonoscopy found and resolved a few polyps,. In cancerous, so that was great news. I also felt sort of cleaned out after- felt better for months than I had been.

ReplyDeleteWe went from full on Summer to Fall this week also. Our first batch of chili was delicious plus added two more dinners to the freezer. Batch cooking season is upon us.
We did the same weather wise, but the afternoon warmth was splendid. Saturday stayed damp though. My daughter has someone produce coming so watching frost.
DeleteSince I’m off today and it’s cool and rainy, I’ll be cooking to get the week started. We have leftover pizza, I’ll make meatloaf, some sort of soup and what is likely the last corn on the cob of the season. Later this week I’ll make ham bbq and tuna noodle casserole. Using what’s on hand bc I’ll blow the budget next weekend with DD home :) Have you ever shared your recipe for bean soup? I’m on the lookout for a good one. My dad bought a quart of a thick ham and soup at a festival a few weeks ago and I can’t stop thinking about it, it was that good! JoAnn

ReplyDeleteI made both chili and pasta salad with garden veg, cooking ahead. We'll still get nice afternoons hopefully for a while. I've already rethought the plan.
DeleteGrilled steak tonight. That's as far as I've gotten. My new range has a built in air fryer, which various family members have tried, and we LOVE it. A kid came home from class, tried making frozen taquitos in it versus the microwave, and declared "It's worth the extra 9 minutes." I made fish and chips in just 15 minutes the other week. This morning, I had the idea that I could run down to the local supermarket, get some sweet potatoes, and make some sweet potato wedges to go with tonight's steak, just to see how it works out. Beyond that, while I made jam, will bake a pie with the remaining blackberries, and have a plan to make apple butter, I feel I've gone off cooking, possibly because with the kids older, with various school and work schedules, it's more often than not just DH and me for dinner.
ReplyDeleteThe air fryer for leftover pizza is great. No dog, no reheating whole oven. I made more steak bites yesterday. DH had other plans for football food.
DeleteThis week, I have a wonderful cut of pork for pulled pork, lots of chicken cooked, and more to cook and freeze, a huge plate of beautiful tomatoes, lots of vegetables cooked and more to cook, plus many cans of vegetables if we need anything else to eat. We finished the sweet potatoes and carrots, so now there is zucchini, yellow squash, and potatoes to cook. We just eat off things as the mood strikes or whatever is cooked. I really want slaw, so we will get that, too.

DeleteIt's feeling like fall around here too and I'm loving it. Made copycat Panera wild rice and chicken soup, and beef stew at the end of last week. Tonight is lasagna. Also making chicken and cheese casserole this week. Ready for more soups and casseroles in our future.
