My Wednesday Kitchen - No Soup for You

      I thought I'd be kettle deep in soup making by November. Instead, I'm thinking salads and grilling. 70° or near it after November 1 is unheard of. But please, tell me more that there is no global warming. We haven't had rain in ages. I don't want Saturday to be a wet and soggy mess when we start sister's day, but I won't complain we need it so bad. 


     So this post isn't about soup or recipes for soup. I can share that my hunt for the packaged creamy wild rice soup mixes is still unsuccessful. It's sold out or not in stock in multiple brands. I nabbed a Tortilla and a Gumbo packet at Fleet Farm, Bear Creek brand. Yes, you can rail against my laziness having both on hand. While I doctor the packets up, the base is loaded with sodium. But, they are convenient to have on hand to bring somewhere or to feed a crowd, or just to make and freeze in a few smaller quantities. I'm over being judged and just accepting that the occasional home made soup will really be just home cooked packets. 


     I know many of you don't care for soup, so packet mixes really won't be your cup of tea. For others, you'd never buy a packet base. If you do sometimes buy the packets, any favorites? Have you tried the tortilla or gumbo?

    1. Same here- I tried one once and threw it away after first bite but hey, today I’m making fish tacos with frozen fish sticks so I don’t always cook from scratch. No judgment! Nan

    2. I figure if not a regular occurrence in my kitchen, plus adding more water and additional vegetables, I'm reducing the sodium a bit. I'm curious Nan- was it flavor too you didn't like?

  2. I don’t judge anyone for what they eat. My soups generally consist of opening a can of either turnip greens, mustard greens,’or collard greens, a can of generic rotel diced mild tomatoes, add bullion and leftover carrots or pumpkin, or sweet potatoes, and add hefty amount of salt, pepper, and garlic. Eat with splash of apple cider vinegar and hot sauce. I also make soup from dried beans and bullion with hefty amount of salt added after the dried beans are cooked because when added too early, my dried beans never seem to finish cooking. So salt is the name of my game….. lol. I do have low blood pressure tho and just don’t worry about it. I could add rice to both but I don’t need more carbs. I eat a lot of sandwiches so have bread with that. Clearly, I am not a picky eater and a challenged cook… lolCindy in the South

  3. I love a creamy wild rice soup, and would totally buy a package if I could find one. I do typically make mine from scratch, but only because I make easy soup recipes. ;-)

  4. I love soups and wouldn't mind having it every day in autumn. That being said, I'm not too keen on "clear" soups - I love them all whisked up and creamy. Split pea and ham soup tonight! Lovely!

    1. I have to laugh at my families reaction to the British puree soup. Unless it's like cream of tomato or squash, I want my soup unwhisked.

  7. I've just googled Tortilla soup and found this vegetarian recipe - I could almost be won over by it! There's nothing wrong with convenience food and shortcuts, it's the 21st Century and most women have lives outside the kitchen. https://cookieandkate.com/vegetarian-tortilla-soup/

  8. I don't usually buy the package soups but I have tried the potato version and we like it. It is a little thicker than we like but I just added some additional water and the problem was solved.

  9. I have used a soup mix to start a soup before, I find them a good base, but don't usually buy them.

  10. I really like Aldi soups, they have a few packets that I add into slow cooker meals or casseroles for a bit more flavour. Or we have them just as soups with bread after a big day and I can’t be bothered to cook. I agree with Vix, my life involves more than standing in the kitchen churning out meals and sometimes I’ll take a shortcut to get my people fed good food in good time.

    1. That's why I posted. I know they hire low on nutritional factors alone, but doctored up and with more water, something easy for a crowd.

  11. I do use the Bear Creek soups a few times a year. I have tried the following: Tortilla, Damn Good Chili, Chicken Noodle, Potato (not a fan,) and Clam Chowder. I figure after I am done it is only about 50% packet. I scratch cook about 90% of the time. I have been going through I tough dinner planning time. Nothing inspires me.

    1. Amy! You describe my philosophy. I too cook mostly from whole ingredients, so I think the occasional short cut is fine.

  12. I had a Big Mac and a baked potato for dinner. I’m no one to judge lol. I’ve only ever had the Bear Creek cheddar broccoli soup and thought it was good. I found single serve cups that you just add water to and microwave, perfect for a quick lunch. I love the warm weather but seeing dandelions in the yard in November is definitely not normal. I made chicken and wild rice soup for the first time the other day and loved it. Can’t wait to make it again. JoAnn

    1. I had a Big Mac about five months ago, and enjoyed it! I didn't fall to the ground. Now the cheddar broccoli is one I was not a fan of.
