My post title is an oxy moron to be true but I'm not feeling anything related to food and meal planning this morning. I soaked beans and later after getting DD2 to her car pool meet-up, I'll make a large batch of bean and ham soup. There is some bits of ham left for some other sort of ham meal to use that up-maybe an egg bake to use up the eggs I have. I made a quick batch of chocolate chip cookies from a mix this morning to send back with my daughter. I just made them both blueberry pancakes and once done, she'll pack the remainder of her things up and we'll be out the door by 10:5. She has to be at school early for a 7:00 choir practice, each night, leading up to the big concerts this weekend.
Since we will be gone Saturday and Sunday. I don't want a bunch of leftovers to later just throw out, so I think meals will be day to day. I'm not opposed to picking up Chinese one night and a Take and Bake pizza another, which means lunches for DH the days after. I've got a wretched cold, all sitting in my throat. That's probably part of why food does not sound appealing right now. Do you ever get in those ruts where the thought of cooking or preparing food is just not there? What are your quick go to meals when you don't feel like cooking?
I will usually get a store rotisserie chicken. Good for a few meals and solve chicken salad and then a pot of chicken noodle soup. Also I will grind some same and make ham salad to put on pita with lettuce and lettuce.
ReplyDeleteThat's an idea. The last time I made soup though with the deli chicken, it was so salty so have to be careful there.
DeleteBottom-of-the-fridge soup always does it for me if I'm not inspired! Of course I don't need to impress anyone but myself either!
ReplyDeleteThe bean and ham is sort of that-leftover ham bone and vegetables. I'm not looking to impress either.
DeleteI like to keep already cooked chicken breasts in the freezer that I can microwave and then serve on hamburger buns with honey mustard, cheese, and pickles. Baked Potatoes are usually pretty easy too.

DeleteDo I ever get in ruts! When I am really at a loss, I make chili, either slow cooker or stovetop if I am in a real rush. I almost always have ground beef in the freezer. I also keep frozen salmon filets (4/package) which take about 30 minutes to cook if thawed, another 10 minutes if cooked from frozen. I serve with white rice, to which I add butter, oregano and lots of grated Dubliner cheese, and salad or frozen veggie. Sometimes I've even served it with canned veggies. It's quick, easy, and every bit as good as if not better than what we'd get in a chain restaurant. At my worst, I will declare "Every man for himself," and leave them to it, knowing full well nobody will starve.
ReplyDeleteI'm in such a rut even chili sounds laborious right now. I'd be happy eating toast all week.
DeleteToast it is, then! If you're feeling motivated, heat up a can of stewed tomatoes to go with it, and you have another of my favorites. But only if you feel motivated. I don't think it's likely your DH is going to starve if you feel the need to steer clear of the stove for a while.

DeleteEasy meals we keep on hand:
ReplyDelete-Trader Joes tomato red pepper soup. Can be thrown together with a toasted roll or something.
-Ravioli in the freezer. Can be eaten as simply as with olive oil & grated cheese
-frozen pizza (always available in a pinch)
-Chicken sausages (freezer). Can add to a bagged salad, or on a roll

Yes-the TJ soup. Must pick up some of that. I have some tortellini in freezer so that will do one night as well for him.

ReplyDeleteMy quick go to meals: pasta with a jar of sauce; M&C with tinned meat/fish added: order out - we have lots of lovely Mexican take out.
I just have the rut really bad right now-nothing sounds interesting or appealing and as I commented above, I could just make toast and be happy. It might be a take out kind of week.
DeleteI love ham and bean soup. It is too bad she is so far away. We always were able to go to all of our Eldest's concerts. I miss those years. 7 years in a huge Jazz choir of over 150 students. Sometimes she was a soloist at Christmas it was lovely.
ReplyDeleteWe will be a t her on campus concert on Saturday, and we have tickets for the one they are doing in Minneapolis. Choir is a huge thing at her college. they will sell out all 6 performances-4 on campus over next weekend and then 2 in Minneapolis.
