Here we go, the kind of predictable unpredictability in our weather. Yesterday was cold and rainy but today that snow may be back. I'm craving a good skip work day and fein illness, but alas, I pulled myself from my warm bed and started my day. Sending good wishes to those in the path of spring storms last night. I'll take an extra week of snow compared to tornados.
I'm dialing in my post a bit to look for a few past favorites- warm hugs I crave for days like this.
Mushroom Strogonoff-My daughters 2nd favorite after chickpea and veggie masala
Chicken lo Mein-a good use it up pantry staples kind of meal
Turkey Meatballs-doctor them up how you like, budget friendly
and one last repeat link.
Bean and Cheese enchiladas-I need to remember I went a bit bean heavy when I first made these, but I liked them.
I need to remember to use my own past posts when I get in ruts. Besides the damp weather wanting me to stay under the covers, I have a spot of vertigo-got up dizzy and now have that spinny unstable nauseous feeling. Good thing I am not driving anywhere today. Despite that, I hope to make the most of the day and crack on with work. I hope your Wednesday is a good one.
The chicken lo mein looks good. There is a Budget Bytes recipe that Sam & I love called "Dragon Noodles", that is a top favorite. We sometimes include meat, or sometimes just eat as is. You are reminding me that I should add it to the menu.
ReplyDeleteFor today, work, take Sam to the DMV for another attempt at the permit test, and then take the kids to their school soccer banquet, which I'm helping to host. Should be fun. I actually enjoy seeing the kids together, as the conversations are typically really amusing, if you can get past the somewhat questionable language & dorky jokes.
I liked the kids banquets in the day-such a nice way to celebrate their hard work. I'm loving stir fry type meals these days.
DeleteI've only had vertigo once, a few years ago, and it was awful. I couldn't even move for most of the day. Hope you are feeling better soon.

ReplyDeleteI haven't had mushroom stroganoff in years - a favourite veggie alternative during my catering years. Mushrooms have tripled in price over the last fortnight so I probably won't be having it for a while yet! xxx
The mushrooms I bought the other day were pricey-20 centers ore and four fewer ounces than the last time, but we love mushroom's in food. I'm surprised you had bikini weather already but good for you enjoying it.
DeleteHope the vertigo passes quickly. We're warm today but a cold front with rain and snow mix is expected tomorrow. As you say that's quite normal at this time of year and much preferable to tornados or hurricanes!
ReplyDeleteI was back to normal by 12, but it was an odd feeling until it passed. Yes, rain and snow mix compared to tornadoes-no question. My fingers were so cold on my walk today though.

DeleteSpring is all about false hope isn't it - it promises that summer is on it's way and then hammers you with cold weather and snow just to let you know who's the boss! Still, summer gets here eventually. And I hope you feel better soon. Never had vertigo but feeling nauseous must be dreadful!

DeleteHave you tried Epley maneuver? I do them when vertigo strikes and it does help. I've looked back at your recipes, they all look good, just the mushroom stroganoff looks really good and I'll try it. Thanks. Celie

ReplyDeleteI LOVE mushrooms - I can eat them in anything - but my husband hates them. I have to cool my mushrooms separately for every meal, and I even make separate spaghetti sauces, lasagna (I build a foil wall down the middle), and chili. But like Vix noted, they are SO expensive right now!
So far mushrooms are higher but not quite three fold. They add such heartiness to a fish. Everyone in my family ( immediate) like them.
