My daughter brought the beauties above over on Sunday. I decided I really needed to turn them into stuffed peppers, ideal for my lunches if leftover. Since these would be eaten by us, I didn't worry about avoiding cheese or meat. I don't really have a recipe. I just make a filling with whatever I might have that sounds good, stuff them full and bake. It got hot yesterday, near 80°F, which was why I deferred roasting the chicken until today. So, I made these in the air fryer.
My filling:
- Cooked rice with onions
- Diced John Morrell Sausage link
- Cheddar cheese
- Onion and garlic powder
- Salt and black pepper
I always cut the peppers in half so they bake easier, plus easier to fill. These took about 30 minutes on 350° in the air fryer. I served with a warm tortilla with a little melted cheese.
Bell peppers are loaded with vitamin C. I forgot to grab oranges or clementines the other day, so the C was needed. They're also fiber rich and low calorie making a nice vessel for portion controlled carbs and meat. It's a nice change of pace for us too. Are you a fan?
I’ve been working since 5 am and need a break. I love red peppers and was able to freeze several from my farm share. I usually steam them before stuffing though since I like them tender. I printed out a recipe for red pepper jelly but I haven’t made it yet. I love to add it to cheese balls for the holidays. I bet your daughter is loving Spain. My second cousin went there several years for a semester abroad too- she’s a Spanish teacher in Iowa now. Nan
ReplyDeleteI should have steamed first, but they did get fairly tender. DH ate two halves, so they were a nice change for him.
DeleteI've only made stuffed peppers once, and I didn't pre-cook (steam?) the peppers. I'll have to try again - what's not to like?
ReplyDeleteSupposed to be a high of 70* today, so I'll probably defrost something to put on the grill. Lots of rain predicted for tomorrow, which I'm fine with for watching the last January 6th hearings, but not fine with for the Yankees game (my son has tickets!).

DeleteWe love stuffed peppers! Mine never got big enough for that this year, so we opted for fajitas a few times, instead.

DeleteThose look delicious. Tommy loves peppers, any color. I know it is a failing of mine that I have tried to remedy, but I hate eating the crunchy bell peppers. However, chopped finely enough and cooked, I do tolerate them. I have a red bell pepper that I need to incorporate into something or slice it for him to eat. Maybe I can stuff it for him.

DeleteI think my kids' favourite meal was stuffed peppers. I used to faff around with them quite a lot so didn't really enjoy making them - that is until I discovered Italian grandma's youtube channel Buen Apetito (I think her name is Petito) - although I'm not sure I'm spelling that right. She was a gem and her peppers were naturally much better than mine!

DeleteI used to make Mexican or Italian stuffed peppers quite a bit but for some reason haven't in awhile. Funny how dishes fall off our radar so often.

DeleteWe often make stuffed peppers and tomatoes, the Greeks call them gemista. I always slice the top off, hollow them out, replace the top and brush them with olive oil before baking in the oven for 15 minutes or so.
ReplyDeleteI usually stuff them with either fruity Moroccan couscous, wholemeal rice with Feta cheese or Indian spiced mashed potato - I might have to make them for tea tomorrow night - there was a bag of 8 in my £1.50 Lidl box this week. xxx
Stuffed with just about anything they taste so good. I love the idea of fruity couscous, and maybe olives.
DeletePeppers are great, we love them in our house. There aren’t many meals that don’t benefit from them added or they can stand as a meal alone like you have done. This looks yummy. Megan.

DeleteAnd can I also recommend zucchini, they are just so easy, so many varieties, and you can use them in so many ways from zucchini chocolate cake to roast zucchini Parmesan fries and hide them in most soups or stews
